The inventiveness of the juicing process is little short of engineering genius. A reciprocating hydraulic ram operates against a spring-loaded juicing head assembly, which has three cylindrical coring knives that are slotted to allow juice to drain through them. These knives pierce the citrus and strain the juice as the ram squeezes against the juicing head withdrawing the blades simultaneously to leave a flattened orange skin.
